I have a customer that has a 2016 Ford F350 6.7L Diesel. It is used for farm work. He has requested that I delete the DEF system. I have never done this, and I believe it requires tuning equipment. Does anyone have any experience in this area? I thought I would post, here, and then go do some reading. Any input, or recommendations would be appreciated.

Quite simple dont do it. (The diesel brothers) did this and they were taken to court by epa for altering an emissions system. On all those vehicles the did in their tv show and ones not aired. If system runs fine leave it be. If not fix it.

Definitely requires tuning software. The PCM will derate the engine pretty quickly once it figures out there's no NOX reduction taking place. Or that there's no NOX sensors at all, depending on how much you delete.
I'd give that job a hard pass. Let someone else take the liability.

Thanks for the advice, guys! I have decided not to take on this task. I think it would be fun, though. I enjoy tackling new challenges. I appreciate, and will listen to, the advice given.
I offered to solve, and fix, the underlying problem, though. We'll see.
