Please what should a good reading be for a HSO2S S2 on a 2008 Honda Accord 2.4L. The sensor is showing a reading of between 5.0 - 7.0 on a scan tool.

That sounds reasonable.
I would manipulate the mixture by making a vacuum leak and watch for it to change according.
You could also introduce propane into the intake and watch for it to report rich.
