If P0642 is a hard fault, I'd pursue that one first. The code definition suggests a partial or complete short to ground on one of the 5V reference circuits. Check for 5V at several sensors underhood KOEO.
Did you also transfer the returnless fuel system from the Sport Trac to the project truck? P0191 suggests a (measured) fuel pressure problem. NOT a circuit fault related to the P0642 above.
P0113 is fpr high voltage on the IAT sensor. No offense, but did you plug it in?
P0345 and P0349 can be tricky.

The P0113 ended up being due to an aftermarket CAI with a modified bracket to hold the sensor. May have been leaking by. I put the original air breather system back in and the code went away.
For the P0345 and P0349, yes the engine was opened up and timing chains replaced. Timing could be off. I have decided to change the cam phasers so I will check the timing when that is done.
The complete fuel system was transferred over to the project truck and far as I can tell everything is connected. Not sure what to test for the P0191 code.
The P0642 is the one that I need the most help with. I have a digital multi-meter but I don't know a whole lot about automotive electrical sensors. For example if I wanted to check for 5v at the fuel pressure sensor, how would I do that? Also, what other sensors under the hood would I test for 5V?

to check the 5v feed to the frp senor first unplug it with the switch open and then look with your dvom for the 5v. Depending on the circuit design on a three wire sensor there maybe two wires with ~ 5v on it, the one with a slightly higher reading will be the reference voltage.
Do you count with a diagram of the donor's car original installation?
I think there are chances the P0642 and the P0192 are related after reading the descriptions.

Do you have (access to) the wiring diagram of the car where you pulled the harnesses, computer, sensors etc from?

Mitchell DIY is always an excellent option. $20 gets you a month of online access to Mitchell service information, which is my professional preference.

I don't love the Haynes format? But that's a tough price to beat. I went this route for a couple cars in my personal fleet just so I could keep the manual in front of me on my phone while doing repairs.

The Carmin Lite android app has '08 Explorer, including Sport Trac, wiring diagrams. And if you don't have an android device it will run on a windows pc with an android emulator.
