jaguar S Type 4.0L V8 engine overheat no heat in car [FIXED?]

Yes I'm pretty sure the pipes are getting hot but like you say yesterday there was definitely a difference in the heat from one side to the other but this morning they seemed to be pretty even but basically low on output but I was running it in auto mode which tends to do its own gentle thing but I was running at 85 which is one down from high and if I put it up to high the fan speeds up but there's no more heat which leads you to think there's some kind of blockage or air lock in the heater core.
My problem with all this is that the car has always had a good coolant mix in it and it has never lost coolant or had to be topped up and just used only water, so I'm thinking the system is pretty much rust and gunk free judging by the colour of the coolant in the bottle,
One or two things have surprised me since I started to put this problem right
1) when I replaced the temp sensor in the top hose there was absolutely no loss of water ,the system was full cold at the time
2)when I replaced the water pump on Sunday I did not drain the system first and just removed the pump with a basin underneath and was very surprised at how little coolant actually came out of the block probably no more than half a pint, again the engine was stone cold and the expansion bottle cap left in place.
3) when I tried to bleed the system after installing the new pump I did this via the tower cap on the thermostat housing tower with engine running and the heater set
to high I put quite a bit of new coolant mix in and kept squeezing the top hose then there was a sudden surge and it blew a lot the coolant back out again so I put the cap back on started filling at the expansion bottle, I'm hoping the surge was due to the thermostat opening and not from gas forced into the system from the cylinders.
Another problem that has been occurring is the rad fan running on very loudly after shutting the car off. If start the engine a couple of times the fan will stop which makes me think there is some electrical problem going on as well and maybe the new temp sensor I put in isn't doing its job correctly.
I'm also wondering if there might be a problem with an internal cabin temp sensor if there is one, like you say there might still be an air lock in the heater matrix but I'm not sure how to clear this if there is.
