I recently watched a video of Paul’s were he showed the effect of only scoping one side of the can rather then both at the same time. As I m looking for a quick, easy to use scope I was sold on the Uscope but after seeing that should I be using a two channel scope such as the micsig scope or am I overthinking it?

The more channels the more versatile the scope will be, but the best scope is the one you will use.
The U-Scope is a very good place to start, especially if you all ready bought one. It is relatively simple to use and easy to carry around. Once you master it, if you feel like you've outgrown it, then you can always move up the ladder.
For CAN signals, because CAN high and CAN low are differential signals, you can put the negative lead on CAN low and the positive lead on CAN high and see the full range of the signal on one channel. It is not the preferred method, but most of the time it is good enough to say there is communication taking place, or there is not.

Thank you Noah for your help could you give me your choice of a non pc based stand alone scope as I have not brought one just yet. I currently use the hantek 1008c scope but don’t like having to set it up just to get a idea of what is happening

For my entire career I have only used Snap-On scopes, so I really can't make an informed recommendation beyond that experience.
Currently my Verus Edge does just about everything I ask of it, all though if money was not a factor, I would have stepped up to Pico long ago.
