I can't seem to find info on this.
What about piercing shielded wires with a piercing probe?
Can this short out shielded wires?
I see a lot of people tapping into what should be shielded Hall Effect signal wires and O2 signal wires on YouTube without seeming to have any problems...
Any thoughts on this?

Wire shielding often looks like a bit of foil wrapped around the wires somewhere in the wire loom, and is usually connected directly to ground.
As long as you are not piercing through the foil shield, there is no greater risk of shorting the circuit.

yes, I am referring to piercing through the shielded foil wrapping and into the signal wire.
I am sure I have seen people do this, but I would think this might cause a problem.
I have been back probing shielded wires at connectors. but sometimes I would like to pierce them for a solid/easy connection...

That's a bad day in the making. I have moved the shield to make access for a piercing tool, but plunging through it is asking for a short to ground.
